RICE BRAN OIL:
The quantity and quality of fat in our diet play an important role in maintaining human health. Countless study and reports concern the negative effects of fats and oils consumption. But we know that fats are essential dietary components. Vegetable oils are the source of essential fatty acids. Essential Fatty acids are those fatty acids which the body cannot synthesize and need to be supplied through diet. However crude RBO has been difficult to refine because of its high FFA content,unsaponifiable matter and dark colour. RBO contains relatively lower content of triacylglcerol compared to other vegetable oil and high content of partial; glycerides,glycolipids,wax esters and unsaponifiable constituents. Rice Bran Oil is extracted from the outer brown layer of rice after chaff (husk). It is notable for its high smoke point of 232C and delicate flavour.It is suitable for high temperature cooking methods such as stir frying and deep frying. Fat and oils act as a heat transfer medium, but also become a component of the food. It must have good thermal and oxidative stability. It has good flavor and shelf life. There are two types of fats we consume in our diet daily. One is invisible fat which comes from vegetable, meat, poultry, cereals, fish, and other foods. The other one is visible fat which is the cooking medium, salad oils and other added sources of oils. However the quantity and quality of visible fat intake need to be controlled to maintain better health. Choosing the right cooking oil is the most important thing to us. SFA in the diet above 10% is not good as it tends to rise the cholesterol levels.SFA below this 10% level is good for health.
MUFA at 10% and above is good as it maintains cholesterol level but below this level is not good for health.
PUFA at the 10% level is good but too much of PUFA is not good more health.

SESAME OIL
Known for over 4000 years, for its beneficial effects. One of the profound writers of Ayurveda Charaka in his Charaka Samhita mentions that sesame oil is the best oil.
Sesame seeds, which are known by the scientific name Sesamum indicum are small black and yellowish brown seeds that are primarily found in Africa, but they also grow in smaller numbers on the Indian subcontinent Sesame oil is highly nourishing, healing and lubricating. Sesame oil is extracted from sesame seeds. It is often used as a flavor enhancer in Chinese, Japanese, Middle Eastern, Korean, and Southeast Asian cuisine .Sesame oil from brown or white sesame seeds contains more tocopherol than sesame oils in black sesame seed. It is one of the edible oils that is lesser known vegetable oils, but is in fact one of the healthiest alternatives to normal vegetable oil options. Oilseeds such as sesame is well known to contain abundant lignans .Two types of lignan compounds existed in sesame seeds, the oil soluble lignans and the water soluble lignan glycosides. In raw sesame seed, sesamin and sesamolin are the two major lignans. Though sesamin has been found in other plants, whereas sesamolin is characteristic of sesame and has not been found in plants other than Sesamum. The wild species of sesame, sesamum angustifolium and sesamum radiatum S. and T. have higher levels of total tocopherols (760 mg/kg & 810mg/kg) in the oil than cultivated species(480-680mg/kg). Gamma tocopherol is the predominant tocopherol in sesame oil. It is a more potent antioxidant in oils. Sesame oil has superior oxidative stability compared with other vegetable oil both at storage temperature and during frying. The minor components of sesame oil, the unsaponifiable fraction, play an important role in the stability of sesame oil and its resistance to oxidative deterioration. Apart from being a healthy cooking oil it has many beauty benefits and works great for the scalp and hair growth. SOYABEAN OIL
Soybean oil is extracted from the soybean (Glycine max) and often has a dark yellow or faint green color. Soybean oil is a major source of the) five of these fatty acids, palmitic (C16:0), stearic (C18:0), oleic (C18:1), linoleic (C18:2), and linolenic (C18:3) (Firestone, 1999). A lack of the daily requirements of these fatty acids can lead to serious health problems. For example, symptoms associated with linoleic (C18:2) fatty acid deficiency are diminished growth, diminished skin pigment, fatty livers, kidney degeneration, and the loss of muscle tone (Chapkin, 1992). Soybean oil is composed of approximately 16% saturated fatty acids (palmitic [C16:0] and stearic [C18:0]), 24% monounsaturated fatty acids (oleic [C18:1]), and 60% polyunsaturated fatty acids (linoleic [C18:2] and linolenic [C18:3]). Many healthcare professionals recommend replacing saturated fats with unsaturated fats.

In a variety of experimental studies, animal models fed high-fat diets rich in (n-3) FA decreased dyslipidemia, cholesterol delivery to the arterial wall, arterial pro inflammatory processes, and increased arterial anti inflammatory biomarkers.

Phytoestrogens isoflavones are the active compounds in soy-derived foods. Isoflavones acts in the body similarly to estrogen as they are called phytoestrogens. Because many women have demonstrated an increased risk of breast cancer, stroke, and heart attacks in response to estrogen and progesterone treatments, the isoflavones intake has become a popular alternative to estrogen therapy (Messina, 2002). By binding to the estrogen receptors (ER) of the cells, isoflavones produces weak estrogenic effects, mainly when an inadequate amount of estrogen is present in the body. As isoflavones play these double-edge functions in the body, they may help in preventing osteoporosis and menopausal symptoms as well as reducing the risk of breast and uterine cancers by blocking the ER activation (Song et al. 2007). Bone health is a major concern in elderly women. Many studies with Asiatic women (China) showed that who consumed the most soy-derived foods were one third less likely to acquire a bone fracture that Chinese women who consumed the lowest amount of soy (Zhang et al. 2005). 10 L. 5. Lowers risk of developing cancer-
Soy consumption has been associated with lower risks of developing cancer or tumor (Kim et al. 2004, Sarkar and Li, 2003, Stoll, 1997). Prostate cancer is known to have increased levels of dihydro testosterone (DHT), and isoflavones inhibited 5alpha-reductase, which is involved in the conversion of testosterone to DHT (Yi et al. 2002). Although a small number of epidemiologic studies support a negative correlation between soy isoflavones and breast cancer risk, many of the case control studies pointed to important limitations (Trock et al. 2006, Yan and Spitznagel, 2005). Supplementation with isoflavones at 43.5 mg/day for 12 months or 85.5 mg/day for 6 months (Atkinson et al. 2004) produced no changes in mammography density, serum estradiol, follicle stimulating hormone, and luteinizing hormone levels in postmenopausal women. While isoflavones have anti-estrogenic effect by blocking endogenous estrogen, experimental data or cultured human breast cell lines showed evidence that soy isoflavones might stimulate breast cancer cells (Martin et al. 1978, Hsich et al. 1998). In general, isoflavone can stimulate the breast cancer cells in women who had already developed breast cancer (a subtype of estrogen-dependent tumor). High levels of estrogens stimulate uterine cells and increase the risk of uterine cancer in susceptible individuals. There are several evidences showing that isoflavones have no effect on the growth of uterine cells (Crisafulli et al. 2004, Wood et al. 2004, Nikander et al. 2005). However, high doses of isoflavones, specially genistein, stimulated uterine growth and expression of estrogen regulated genes in uterus (Diehl et al. 2001). Lastly, the risk for postmenopausal women to develop an endometrial cancer under a chronic consumption of soybean is reported to be low.
Refined soyabean oil
Why should soybean oil have been refined?
Most crude oils and fats consist for more than 95% of mixtures of triacylglycerols. The non triacylglycerol fraction contains variable amounts of phosphatides, free fatty acids, oxidation products, unsaponifiable matter (tocopherol, sterols, hydrocarbons etc.) and other so-called impurities.
The quantities of these minor components in crude oils vary with the oil source, extraction process, season and geographical origins. They can have different effects on the nutritional, functional and organoleptic properties of the oil. The general objective of refining is to remove those components that have an adverse effect on the overall oil quality with the least possible damage to the triacylglycerols. At the same time, minor components with a known positive impact have to be retained as much as possible in the oil (Farhoosh, et al., 2009). Some components like fatty acids, mono and diacylglycerols and phosphatides are the glyceride origin. Although phosphatides protect the crude oil from oxidation, they need to be removed because of their negative effect on the color, taste and oxidative stability of the oil. Other minor components can be isolated in the unsaponifiable fraction. The main components of the unsaponifiable fraction (0.3-2%) include sterols, tocopherols, hydrocarbons, pigments and vitamins. The potential possible impact of some components of the unsaponifiable fraction, on health receives a lot of attention. Tocopherols for example are the most important natural antioxidants of phenolic nature protecting the edible oils from oxidation (Lu & Liu, 2002). On the other side, tocopherols are also biologically active substances with a generally accepted vitamin activity in the human body. Phytosterols are desired because they may reduce blood cholesterol.
